It's generally a case at looking at photo's of the real thing and then matching paint shades for spraying and hand painting. Also different shades of ballast materials are readily available as well.
I gave up on fully ballasting track years ago, it just takes sooooooooooooooooooooo long and kills the knees and eyes. I use the foam underlay that Peco and the likes of hornby do and weather it using acrylic colours from spray cans and the airbrush, and then just ballast the shoulders, it saves a lot of time and still looks very good. I stick the foam underlay down using a pva wood glue with particular attention being paid to the edges of the foam where it joints the baseboard to form a seamless seal with the baseboard which stops bits of ballast getting under the foam and eventually lifting the edges of the foam.
Foam ballast also avoids getting stray ballast into points/turnouts etc., which can cuse electrical problems even on the best ballasted track etc., as you always get bits of stray ballast that refuse to stick down and tend to find their way into motors, points etc.
